Spiced Napoleones

Napoleones is a layered puff pastry filled with custard cream and glazed with white sugar on top. It comes with small square size and a larger rectangle size and usually sold in boxes. Biting into napoleones gives you a crunchy sensation from the layered puff then a soft, creamy and sweet taste from the custard cream filling and sugar glaze.

This is one of my all-time favorite sweet so I thought of giving it a little twist: Napoleones with green cardamom pastry cream. I thought of putting green cardamom pastry cream filling because there was some leftover from the macarons I made. (hehe)

This was also very easy to make because I bought an already made puff pastry.

Here’s the recipe!~

Pastry Cream


Milk, Fresh                 500ml

Sugar, Refined                   62.5g

Egg yolks     37.5g (2pcs.)

Whole Eggs           55g (1pc.)

Cornstarch                   37.5g

Sugar, Refined                   62.5g

Butter, Unsalted                      60g

Green Cardamom Pods             1-2 pods


  • In a heavy saucepan, dissolve the 125g. sugar in the milk, add the green cardamom and bring just to a boil.
  • Strain the milk mixture after just a boil.
  • Beat the egg yolks and whole eggs in a stainless-steel bowl.
  • Sift the cornstarch and remaining 125g. sugar into the eggs.  Beat until perfectly smooth.
  • Temper the egg mixture by slowly beating in the hot milk in a thin stream.
  • Return the mixture to the heat and bring to a boil, stirring constantly.
  • When the mixture comes to a boil and thickens, remove from the heat.
  • Stir in the butter .  Mix until the butter is melted and completely blended in.
  • Pour out into a clean and shallow pan.  Dust lightly with sugar and cover with wax paper to prevent a crust from forming.  Cool and chill as quickly as possible.
  • You may whip the chilled pastry cream until smooth before using
