Macaron with Cardamom Cream Filling

The dessert I chose to make is an almond macaron. It is a French sweet meringue-based confection made with egg whites,icing sugar or powdered sugar,granulated sugar,almond powder or ground almond and food coloring.

I’ve decided to make a little twist and tried filling it with pastry cream that has been flavored with green cardamom.

Now let’s start baking!

Pastry Cream


Milk, Fresh                 500ml

Sugar, Refined                   62.5g

Egg yolks     37.5g (2pcs.)

Whole Eggs           55g (1pc.)

Cornstarch                   37.5g

Sugar, Refined                   62.5g

Butter, Unsalted                      60g

Green Cardamom Pods             1-2 pods


  • In a heavy saucepan, dissolve the 125g. sugar in the milk, add the green cardamom and bring just to a boil.
  • Strain the milk mixture after just a boil.
  • Beat the egg yolks and whole eggs in a stainless-steel bowl.
  • Sift the cornstarch and remaining 125g. sugar into the eggs.  Beat until perfectly smooth.
  • Temper the egg mixture by slowly beating in the hot milk in a thin stream.
  • Return the mixture to the heat and bring to a boil, stirring constantly.
  • When the mixture comes to a boil and thickens, remove from the heat.
  • Stir in the butter .  Mix until the butter is melted and completely blended in.
  • Pour out into a clean and shallow pan.  Dust lightly with sugar and cover with wax paper to prevent a crust from forming.  Cool and chill as quickly as possible.
  • You may whip the chilled pastry cream until smooth before using


Macaron Cookie


Almond Flour          150g

Sugar, Powdered          150g

Egg Whites            55g

Granulated Sugar          150g

Water             35g

Egg Whites             55g


  • Mix the powdered sugar and almond flour
  • Place the mix in a bowl and mix with (not whipped) egg white.
  • Boil granulated sugar and water up to 118oC. add it to the egg white.
  • Let it cool down on speed 3.
  • Fold meringue slowly into almond flour mixture. Mix till desired viscosity.
  • Pipe small dots on a silpat sheet.
  • Bake in a preheated oven at 160oC for about 15 minutes.
  • Do not open during baking.
  • Let them cool down in a cooling rack.

The spice that I chose to use for this recipe is Green Cardamom. I chose this spice because just like the Rainbow, this spice is related to nature.

Cardamom is a native to the evergreen forests of India. It is a pepper citrusy spice that only needs a little to impart flavor. It has a strong, unique taste, with an intensely aromatic, resinous fragrance. This spice is usually used in sweet dishes in Indian cuisine like in their tea.

Green is one of the colors of rainbow and this color represents Nature. Whenever I see this color, I remember the beautiful green sceneries our world has to offer, then I feel relax.

This spice also has health benefits like it’s good for digestion and detoxifier. According to the Ayurvedic medicine, this spice has an antidepressant quality. So in a way, it fights depression.
